He speaks about how he becomes more humble but still strives for effort. He appreciates respect for food, forest and the ecosystem – as well as moderation overall. It is ok to freeze foods (which as a dietitian is also ok to move through a busy time period). I loved his description of the different herbs.

Alex speaks well about food security as well having cooked with the youth centre. Just remember – these are hardworking people and families, so remember that your food adventure, experience and new places – yes it is a privilege – but it can make a difference to people in the community if you can appreciate that it is a privilege to be welcomed into their space.
