An incredible server/bartender can make such a difference along with impeccable food to create an impeccable dining experience. Tom hosted as a server for an incredible dinner at Port City Royal in Saint John, NB – a friend and I went for dinner. Tom was so fun – as I mention on the show – I harassed him to interview with me so we met at Picaroons a local brewery – (not actually but did insist he had something to offer) and he also works at Rogue Coffee. This was one of those ‘true road trip’ experiences captures on the podcast of actually meeting people in their preferred places and finding out about a person’s experiences.
He is well educated (two years kinesiology, and business) and taking time off to work at both Port City Royal and Rogue Coffee and incorporate life – he had some very educated, fun, open and delightful ways of looking at being fresh and interested in the standards of food – but in a very accessible way. He provides a very straight forward answers to some of the broader food system answers. Some of my favourite descriptions have to do with the actual food with trying new things. Please do take a listen to a light fun conversation that shares a lot and has an impressive take on the important topics.

Some quotes:
“The fact that food that people go out for food… people get together to have food… food is more of an experience rather than just straight up sustenance… it creates community and harvest… there is something that is unique in some way”
“Port city is very maritimey food – roots, shoots and beets.”
“a healthy relationship with food would be enjoying the most that I can with food I like”
“Canada is so diverse and so mysterious…
“they buy the freshest, the menu can change almost daily – just depending on what is the most readily available and most fresh and what is up to their standards for what they want to serve which is very high… there are really hardly any compromises that I can fathom” …
“I mean, it’s nice to be able to be very proud of what you’re talking about.”
“When people have the most valuable experience, not just there, but like any restaurant that you go to, it’s just when you can have a conversation with your server, with like whoever’s working, or with your friends, just about the food and what’s going on… talk to people that are kind of knowledgeable and just, you you have the best time with it”
“I’d love to be a hamburger. I love hamburgers. It’s because they’re diverse… Like I have a friend who’s doing culinary in PEI right now and we were talking about peanut butter burgers…”
“there’ll be like there’ll be multiple stories for the same exact beverage or the same exact liquor of how it was like conceived or how like it’s produced and that’s kind of fun.”
Hope you enjoy!
Happy Tasting
